Recipe for French Breakfast of Crepes

When you think of French cuisine, the movie Ratatouille may come to your mind with images of a mouse creating a typical French soup. Or maybe your mind flutters to French Onion Soup. Or perhaps to croissants, which actually originated in its earlier forms in Austria and was introduced as a plain croissant by a Viennese baker. When thinking of breakfast foods, you might have childhood memories of eating French toast on Saturday mornings. As you have grown, perhaps your taste buds have become more refined, and you now prefer crepes as your French breakfast food of choice. You could support local businesses by going to the nearest creperie. Or you could save on gas and try your hand at making crepes at home! Grab these ingredients and follow this recipe for a French breakfast of Crepes!

Ingredients:

1 egg

1/8 cup melted butter

1 1/4 TBS sugar

1/4 cup all-purpose flour

1/4 cup milk

1 TB water

1 tsp vanilla

Dash of salt

1. Put the flour aside and whisk all other ingredients together in a bowl.

2. Set the crepe batter aside and allow it to rise for 10 minutes. After 10 minutes, briefly whisk the batter again before moving onto the next step.

3. Use unsalted butter to grease a 6″ non-stick skillet. Heat the skillet over medium heat. Pour 2-3 tablespoons of batter into the skillet and rotate from side to side to spread the batter across the whole bottom of the pan.

4. Cook each side of the crepe for 30 seconds before attempting to gently loosen up the edges of the crepe with a large spatula. If the edges lift easily, it is ready to be flipped. If it is still sticking to the pan, cook for 10 to 15 more seconds and try lifting it again.

5. Once the edges come up easily, gently lift the crepe out of the pan, flip over back into the pan and cook the uncooked side for 10 to 15 seconds

6. Remove from pan to cool.

7. Top or fill your crepe with any ingredient you like. For a sweet crepe you could top or fill with cream filling, Nutella, chocolate sauce, strawberries, blueberries, etc. For a savory crepe, top or fill with nuts, cheese, mushrooms, meat, eggs, tomatoes, etc.

This recipe will yield approximately 4 crepes. It requires about 10 minutes of prep time and 10 minutes of cook time.
